  • ¼ cup unsweetened applesauce
  • ½ cup granulated sugar or Swerve granulated sugar substitute
  • 3 teaspoons gluten free baking powder
  • 1 cup unsweetened almond milk
  • 1 teaspoon vanilla extract
  • ¼ cup melted coconut oil

Topping

  • ¼ cup brown sugar or Swerve brown sugar substitute
  • 1 teaspoon cinnamon

Glaze

  • ½ cup powdered sugar or Swerve confectioners sugar substitute
  • almond milk as needed

Instructions
 

  • Preheat the oven to 350 degrees.
  • Blend together the gluten free flour, applesauce, sugar, baking powder, almond milk, vanilla and coconut oil to a mixing bowl until well combined.
  • Spoon the batter into a muffin tin lined with cupcake liners, filling them almost to the top.
  • Mix together the brown sugar and cinnamon.

  • Bake for 25 minutes, or until completely cooked through.
