Ingredients
  

  • 1 whole chicken 4 lbs
  • 1 onion peeled and cut into pieces
  • 1 lemon cut into pieces
  • 3 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon coriander
  • 1 teaspoon granulated garlic
  • 1/2 teaspoon paprika
  • fresh thyme rosemary optional

Instructions
 

  • In a small bowl, combine the olive oil, salt and spice.
  • Coat the chicken with the spice mixture all over (and inside).
  • Preheat the oven to 350F. Place the lemon and onion pieces inside of the chicken.
  • Tie the legs together with kitchen string and add thyme and rosemary to the baking dish.
  • Cover the baking dish with foil and place in the oven. Bake the chicken for about 1-1.5 hours. This allows the meat to heat evenly and retain moisture.
  • Increase the temperature to 400°F, remove the foil and continue to bake the chicken for another 20-30 minutes to create a golden crust.

To ensure the chicken is cooked through, make sure the internal temperature reaches 165°F in the thickest part (such as the breast or thigh).
