Ingredients
  

  • 1 lb pork chops bone-in or boneless for bone-in 1.5 lbs for bone weight
  • 1 tablespoon avocado oil
  • 2 cups mushrooms sliced
  • ½ cup sliced onion
  • ½ cup stock beef, chicken or bone broth
  • ¼ cup heavy cream
  • ¼ cup sour cream
  • ½ teaspoon garlic powder
  • ½ teaspoon salt more or less to taste
  • Pepper To taste
  • Garnish: minced parsley Optional

Instructions
 

  • Heat Instant Pot to saute mode and add the oil.
  • Cook the pork chops in batches (if they don’t all fit in one batch) 2-3 minutes per side.
  • Set the pork chops aside and add the onions to the Instant Pot, saute about 30 seconds.
  • Then add the mushrooms and saute for 1 minute, stir continuously.
  • Pour in the stock and stir in the salt, garlic powder, and cream.
  • Place the browned pork chops on top of the mixture and close the Instant Pot lid.
