How to Store and Reheat Roasted Red Pepper Chicken
Roasted red pepper chicken makes excellent leftovers, so don’t worry if you’ve made a large batch. To store, place any remaining chicken in an airtight container and refrigerate for up to 4 days. For meal prep, this dish can also be frozen for up to 3 months.
When reheating, place the chicken in the oven at 350°F until warmed through, or use the microwave for quicker reheating. To keep the skin crispy, avoid using the microwave if possible.
Nutritional Benefits of Chicken Thighs
Chicken thighs are an excellent source of protein, rich in nutrients like iron, zinc, and vitamin B12. Unlike chicken breasts, thighs contain a bit more fat, which makes them ideal for those on low-carb or keto diets. The higher fat content also adds flavor and helps keep the meat juicy when roasted, ensuring a delicious, tender bite every time.
Why This Recipe is Ideal for Meal Prep
Roasted red pepper chicken is not only easy to prepare, but it also stores and reheats well, making it perfect for meal prep. You can cook up a large batch, portion it out for the week, and pair it with different sides for variety. Whether for a quick lunch or a protein-packed dinner, this dish will keep you satisfied throughout the week without spending hours in the kitchen.
