Roasted Red Pepper Chicken

Ingredients
  

  • 3-4 lbs Chicken thighs Bone in, skin on trim off extra skin
  • 1 red bell pepper, sliced thin
  • cup salsa
  • 1 cup grape tomatoes whole
  • Salt to taste
  • Pepper to taste

Instructions
 

  • Preheat oven to 400°F
  • Place pepper strips on the bottom of the pan
  • Spoon a thin layer of salsa over the pepper strips
  • Place thighs on top of the pepper and salsa base
  • Salt and pepper each thigh
  • Spoon 1-2 tablespoons of salsa on top of each thigh
  • Add grape tomatoes around the edges of the chicken
  • Roast at 400°F for 40 minutes and then broil for 5 minutes to crisp skin
