Heat Instant Pot to saute mode and add the oil.
Cook the pork chops in batches (if they don’t all fit in one batch) 2-3 minutes per side.
Set the pork chops aside and add the onions to the Instant Pot, saute about 30 seconds.
Then add the mushrooms and saute for 1 minute, stir continuously.
Pour in the stock and stir in the salt, garlic powder, and cream.
Place the browned pork chops on top of the mixture and close the Instant Pot lid.
Cook on manual – high for 12 minutes then allow the pressure to naturally release for 5 minutes. The total time is about 25 minutes.
Release any remaining pressure by carefully turning the pressure valve.
Open the Instant Pot and pull out the pork Stir in the sour cream. Turn the Instant Pot to saute mode to cook down the sauce to the thickness you prefer.
Serve the pork chops with the mushroom sauce.
