Preheat oven to 350 degrees F.
In a large skillet over medium heat fry the bacon until crispy. Remove bacon from pan and drain off all fat except about 1 tablespoon.
Add in the diced apples, shallot, coffee, honey, salt, apple cider vinegar, and a pinch of cayenne pepper.
Bring to a simmer and simmer just until the apples are soft.
Transfer all but a few tablespoons worth to a blender and blend until smooth.
Slice the top off of the wheel of brie, top with prepared jam and place on a baking sheet or in a small baking dish.
Bake 5-10 minutes until bubbly.
To serve, top the brie with the reserved apple bacon mixture and serve with some fresh sliced apples for dipping.
