In a large skillet over medium-high heat, cook the ground beef, breaking it up as it cooks, until browned (about 6-8 minutes). Drain any excess fat, then stir in the taco seasoning and ¼ cup of water. Set the beef aside.
Preheat the oven to 400°F and line a 9x13-inch (or larger) baking sheet with aluminum foil.
Arrange half of the chips in an even layer on the prepared baking sheet. Layer half of the cooked ground beef, corn, black beans, and 1 cup of shredded cheddar cheese on top.
Add the remaining chips as a second layer. Top with the remaining beef, corn, black beans, and the other cup of cheddar cheese.
Bake for 6-8 minutes, until the chips are golden and everything is heated through. Keep an eye on them to prevent burning.
While the nachos bake, heat the queso blanco according to the jar's directions. Once the nachos are done, remove them from the oven and drizzle the warm queso over the top.
Finish with your choice of optional toppings and serve immediately.
