Parmesan Truffle Fries

Ingredients
  

  • 4 medium russet potatoes
  • 2 tablespoons olive oil
  • 2 tablespoons truffle oil
  • 1/4 cup shredded Parmesan cheese
  • 1/4 teaspoon salt or to taste
  • Fresh parsley chopped

Instructions
 

  • Peel and wash the potatoes thoroughly. Using a mandoline or a knife, slice them into evenly sized fries.
  • Place the cut fries in a bowl of ice water and let them soak for 5 minutes to remove excess starch. Drain them and pat dry with paper towels to ensure they’re fully dry.
  • Toss the dried fries with olive oil in a bowl, making sure they’re evenly coated. Transfer the fries to the air fryer basket.
  • Set the air fryer to 375°F (190°C) and cook the fries for 35-40 minutes, or until they are golden brown and crispy, shaking the basket halfway through for even cooking.
  • While the fries are cooking, shred the Parmesan cheese and chop the fresh parsley.
  • When the fries are done, place them on a serving tray. Drizzle the truffle oil around the sides of a large mixing bowl.
  • Add the fries to the bowl with truffle oil and gently toss to coat them evenly. Season with salt to taste.
  • Arrange the truffle-coated fries back on the serving tray, then sprinkle the Parmesan cheese and parsley over the top.
  • Serve immediately while hot for the best flavor and texture.
