Peel and wash the potatoes thoroughly. Using a mandoline or a knife, slice them into evenly sized fries.
Place the cut fries in a bowl of ice water and let them soak for 5 minutes to remove excess starch. Drain them and pat dry with paper towels to ensure they’re fully dry.
Toss the dried fries with olive oil in a bowl, making sure they’re evenly coated. Transfer the fries to the air fryer basket.
Set the air fryer to 375°F (190°C) and cook the fries for 35-40 minutes, or until they are golden brown and crispy, shaking the basket halfway through for even cooking.
While the fries are cooking, shred the Parmesan cheese and chop the fresh parsley.
When the fries are done, place them on a serving tray. Drizzle the truffle oil around the sides of a large mixing bowl.
Add the fries to the bowl with truffle oil and gently toss to coat them evenly. Season with salt to taste.
Arrange the truffle-coated fries back on the serving tray, then sprinkle the Parmesan cheese and parsley over the top.
Serve immediately while hot for the best flavor and texture.
