Greek Lemon Potatoes

Ingredients
  

  • 3 medium potatoes cut into wedges
  • 1/4 cup olive oil
  • 1/2 cup vegetable broth
  • Juice of 1 lemon
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 lemons 1 for juice, 1 for slicing
  • 2 cloves garlic minced
  • Chopped parsley for garnish

Instructions
 

  • Preheat your oven to 400°F.
  • Arrange the potato wedges in a single layer in a baking dish.
  • In a bowl, whisk together the vegetable broth, juice from 1 lemon, olive oil, oregano, salt, and black pepper.
  • Pour the mixture evenly over the potato wedges, ensuring all pieces are coated.
  • Mince the garlic and sprinkle it evenly over the potatoes.
  • Slice the second lemon into thin rounds and place the slices over the top of the potatoes.
  • Bake in the preheated oven for 45–55 minutes, or until the potatoes are tender and golden brown, turning them halfway through for even cooking.
  • Remove from the oven and sprinkle with chopped parsley for a fresh, vibrant garnish.
