Gluten Free Pot Roast

Ingredients
  

  • 3 to 5 pounds chuck roast or any roast on sale
  • 1 large onion diced
  • 4 large carrots peeled and diced
  • 4 large celery stalks diced
  • 2 packets Lipton dry onion soup mix
  • 1 16-ounce beer (substitute with additional broth or water if preferred)
  • 1 cup beef broth or water

Instructions
 

  • Place the diced celery, onions, and carrots at the bottom of a slow cooker.
  • Sprinkle the dry onion soup mix evenly over the vegetables.
  • Pour the beer and beef broth over the vegetables, ensuring they are well covered.
  • Place the roast on top of the seasoned vegetables.
  • Cover and cook on low for 6 to 8 hours, until the roast is fully cooked and tender.
  • Use two forks to shred the beef directly in the slow cooker, or transfer it to a cutting board for easier handling.
  • Serve the shredded meat and vegetables over just about anything!
