Chicken and Tortilla Soup

Ingredients
  

  • 2 tablespoons butter unsalted
  • ½ onion chopped
  • ½ red bell pepper chopped
  • 2 Jalapenos deseeded and finely chopped
  • 2 teaspoons minced garlic
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon oregano
  • ½ teaspoon chili powder
  • Squeeze of fresh lime juice
  • 1 can Rotel undrained
  • 3 cups shredded chicken breast
  • 5 cups chicken broth
  • Salt and pepper to taste
  • optional 1 large or two small low carb tortillas

Instructions
 

  • Melt the butter in a pot over medium heat.
  • To the pot, add the onions, peppers and jalapenos. Saute until tender.
  • Add the minced garlic, chili powder, cumin, paprika, oregano, lime juice and salt and pepper to taste. Mix well.
  • Add the Rotel and chicken, mix well.
  • Finally, add the chicken broth and cover. Reduce the heat to medium low and simmer for 20 minutes.
  • Heat the oven to broil.
  • Place tortilla on a baking sheet, flipping it every so often until browned and crispy.
  • Cut the tortillas into strips.
  • Serve the soup with strips of tortilla on top.
