Brown "Sugar" Glazed Carrots

Ingredients
  

  • 1 pound Carrots peeled and sliced to ½ inch thick
  • ¼ cup butter softened
  • ¼ teaspoons low carb brown sweetener packed
  • 2 tablespoons fresh chopped parsley
  • Salt and pepper to taste

Instructions
 

  • Place the sliced carrots into a pot and add enough water to just cover them. Set the pot over medium heat and bring the water to a gentle boil. Cook until the carrots are tender.
  • Drain the carrots and remove them from the pot, setting them aside.
  • Return the pot to the stove over medium heat and add the butter and brown sweetener. Stir until the butter has fully melted.
  • Add the cooked carrots back into the pot along with salt and pepper to taste. Toss well until the carrots are evenly coated in the glaze.
  • Transfer to a serving dish and garnish with freshly chopped parsley before serving.
